Marco Monnanni, Chef and Partner of Bacco Trattoria, taps into ages of ancestral Italian cooking. Each time Chef Marco is in the kitchen, he brings a rich love of the cuisine that he has so skillfully learned through the years. Born in Rome, Central Italy, Monnanni was a restaurant apprentice at age 14 in Rome, making fresh pasta and other specialities by hand; he later attended hotel school in Verona, Italy. Monnanni's creative talent drew him to restaurants in northern and southern Italy. Chef Monnanni honed his skills in international kitchens in Switzerland, Germany and later in New York City and Las Vegas. He also was chef and partner at Antica Roma, Pane e Vino and Acqua Pazza in Boulder, Colorado. A man with a sweet smile, Monnanni speaks Italian, English and Spanish and has a passion for skiing.
Together Monnanni and the girls of Cassoulet Entrees have combined to create Bacco Trattoria, a unique restaurant offering a relaxed atmosphere and authentic Italian food and beverage. The decor is soft and traditional, but still carries a theme of Italian culture and trendy buzz with an open kitchen and prep area viewable to our guests. Open Kitchen feels like they are in your kitchen at home making your meal. Food is consistent and fresh. My wife and I visit every Friday night. $ for meal is very reasonable. Great atmosphere!!

Great customer service, fantastic prices during happy hour, the selection is superb, they have something for everyone and the most authentic italian food I have ever had! The muscles are divine, the tuna taratara is amazing and the ravioli spinaci is the best I have ever had! Love the layout of the kitchen and the location is great!

Their food is wonderful, the atmosphere is quaint, the staff is sooo friendly and the Owners are terrific. We eat there as often as possible. Oh and did I mention that the chef is actually from Italy?
