Protos first opened in 1999 when Pam Proto finally decided that in order to get true Neapolitan Pizza in Colorado, she would have to do it herself. Just before the first Protos opened in Longmont Colorado, she partnered with Rayme Rossello and they opened the doors. It was an overnight success. Apparently others in Colorado were waiting for good Za' as well. Pizza Lovers drove to the Longmont store from distant towns like Loveland, Parker, and Estes Park.

I do contract work for a unit above Proto's. To smell their cooking put's me compleatly under. I can no longer think of work. I can only think of eating. I'm rendered useless untill fuled by pizza. Proto's staff are all friendly which makes their pizza taste that much better.

Proto's is excellent. The pizza tastes wonderful (Friday night Clam pizza is our favorite). They also have great appetizers, and the staff treat us right.
