Vesta, the Goddess of the Hearth, is the most beautiful of Roman divinities, bright and pure like the flame that is her symbol. Her name derives from a Sanskrit root, vas, which expresses the idea of "shining." Latins made Vesta a goddess who personified the earth and fire. She presided over the preparation of meals: Vesta was offered the first food and drink.
The hearth conjures up visions of domesticity and peace, for the hearth is the traditional center of family life. It symbolizes warmth, security, and companionship a place for dreaming where it becomes possible by peering into the embers, to find physical and mental renewal and a place to discover the secrets of the future.

Vesta gets my vote for the best restaurant in Denver - I've been going to Vesta since 1999, and have never been disappointed. Terrific staff, fantastic menu, awesome sauces, and always something new. The bartenders are friendly and knowledgeable, and the general manager keeps the staff well trained and up to date on the always new offerings from Vesta's chef. For a treat, eat at the bar, have some dipping sauces with Pita, and try the Vesta Roll appetizer.....can't go wrong with that start!

Wow! was not looking for the Best Romantic Restaurant to find Vest Dipping Grill!
Was looking for best food and just best service with atmosphere!
When I go out and down town I will only go to Vesta because any fresh seared fish is safe to eat there besides eating it at a Sushi place and is very high quality which with the dipping sauces will melt in your mouth. The waiters and Joshua and Jenny (the owners) will remember you and make you feel a "special person"
I have tried most of the dishes and have to say: I was never dissapointed and always loved all my meals even though the Seared Tuna is truly my "dish" there and I am from Europe and I lived in the East where we can get any ethnic food and
living now in Denver, the "cow town" I will only go and eat at Vesta Dipping Grill and when my friends come from the East or from Europe we all only will go to Vesta Dipping Grill.

A wonderful way to share 'bites' and share a night guaranteed to have a wonderful meal - NEVER a bad meal - each bite is a new flavor and such a refreshing experience!!

we love vesta!! we love to sit at the bar and do the cheese plate with wine. Same dipping thing with cheeses, three kinds of sauces. They have a Malbec my husband loves. The concrete wavy bar is great for conversation. We take friends to impress them.
